Recipe: Chocolate eggnog muffins

Ingredients:

2 tablespoons softened butter

⅓ cup sugar

2 large egg whites

2½ ripe bananas, mashed

3 tablespoons unsweetened applesauce

½ teaspoon vanilla extract

⅓ cup low-fat eggnog

1¼ cups whole-wheat flour

¼ cup oats

¾ teaspoon baking soda

¼ teaspoon salt

½ teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ cup dark chocolate chips

½ cup pecans

Directions:

  1. Preheat your oven to 325°F and line a 12-muffin tin with liners or spray with non-stick spray.
  2. Using an electric mixer, blend the softened butter and sugar until creamy.
  3. Add the egg whites, mashed bananas, applesauce, vanilla extract and eggnog to the mixture. Beat until everything is well combined.
  4. In another bowl, combine the whole-wheat flour, oats, baking soda, salt, cinnamon and nutmeg.
  5. Gradually add the flour mixture to the wet ingredients and mix on low, blending until just combined.
  6. Mix in the dark chocolate chips and the pecans with a spatula, blending until just combined.
  7. Evenly distribute the batter into the muffin tins.
  8. Bake for approximately 30 minutes or until a toothpick comes out clean.
